Soy and Sweet Chilli Tofu
This is very tastey and easy to make!
Ingredients
For a totally vegan meal, make sure your sweet chili sauce is vegan and that your breadcrumbs are too.
- Firm tofu, as much as you want.
- 4 tablespoons of Extra Virgin Olive oil
- 4 tablespoons of Soya oil
- 4 tablespoons of Soy sauce
- 1 small clove of garlic, minced (optional)
- Roughly about 2 tablespoon of Thai Sweet Chilli Sauce
- Breadcrumbs
Obvioulsy increase or decrease amounts depending on how much tofu you use. The marinade can be stored in the refrigerator if it's not all used up.
Directions
- Rinse tofu in clean cold water then press between paper towels to get as much moisture out as possible.
- Cut tofu into roughly 2x1cm rectangles (or any way you want and any size is fine too).
- In a container with a sealable lid, pour the oils and soy sacue and add the sweet chilli sauce and garlic. Mix well.
- Place tofu pieces into the marinade, seal lid and give the container a good shake. Leave to mariade for at least 30 minutes. The longer the better. Give the container a shake every now and then to make sure each tofu piece is covered in the marinade.
- If you don't have ready-made breadcrumbs, they're easy to make. Toast about 2 slices of day old bread and wait until they're completely cool before breaking them up into quarters and blizting them in a food processor until you've reached the desired crumb size. The finer the crumbs, the better, but not too powdery.
- Once the tofu has marinated, put the breadcrumbs in a bowl, container or sealable bag and coat each piece of tofu thoughroughly.
- In a frying pan put a mix of olive oil and soya oil and heat on a medium-high heat. You need enough oil to cover the bottom of the pan, but the tofu doesn't need to swim in it. Use a peice of tofu to test if the oil is hot enough - if the tofu sizzles it's ready. Turn your heat down to a low-medium head. Fry each side of the tofu pieces until golden brown.
- Once tofu is cooked, place on a paper towel to soak up some of the excess oil.
This can be eaten by itself or mixed into a green salad. It goes with pretty much anything, so use your imagination!
