Textured Soy Protein Tacos
So flippin' good!
Preperation time: 30 minutes.
Serves: 2-3.
Ingredients
You can replace any of these with vegan versions, like I do.
- 1 ½ cups dry textured soy protein
- ¼ onion, finely chopped
- ¼ red or green bell pepper, finely chopped
- 1 clove garlic, minced
- ½ teaspoon cumin powder
- Dash (or more) chipotle powder or 1 chopped canned jalapeno (optional. I use dried chili flakes usually)
- 3/4 small can tomato or taco sauce (I use powdered taco seasoning)
- Remaining taco sauce for on top of tacos or if you used the taco powder, you'll need to buy or make a taco sauce for on top
- Some fresh ground pepper
- Chopped tomatoes, lettuce, cilantro, onions, grated carrot, grated cheese, or whatever you like to put on top.
- Sour cream for on top of the tacos.
- 6 Taco shells
Directions
- Soak textured soy protein as directed on packet.
- Saute onions, peppers, and garlic for about 5 minutes.
- Add textured soy protein, tomato or taco sauce (or powder), chipotle powder and/or jalapeno, cumin and ground pepper. Simmer on low heat for 15-20 minutes, stiring occasionally.
- If you use powdered taco seasoning, you will need to add a small amount of water so the mix isn't too dry.
- While the TSP mix simmers, chop tomatoes, etc. for toppings and heat up your taco shells as directed on their packet.
- TSP "meat" is done when its thick (you dont want it oozing out of the taco shells).
- Fill taco shells with a bit of the TSP mix, then place desired chopped and grated vegies on top, put a teaspoonful of the left over taco sauce and a teaspoonful of sour cream on top. Serve with whatever you like best, e.g, salad, vegetables.
